The evening begins with a welcome cocktail and amuse bouche before guests enjoy a progression of island-inspired flavors, including Filipino lumpia, pineapple meatballs, seared tuna steak, and coconut-rum panna cotta. Each course is paired with a historically significant tiki cocktail reimagined with Virago Spirits rums and gin — from the 1880s Cocoyage and the classic Queens Park Swizzle to Trader Vic favorites like the Voodoo Grog and communal Tiki Bowl.
